Buying guide
A sushi tub, hangiri or sushi oke, is a round, flat-bottomed wooden tub used for the last steps of preparing sushi rice. The cooked rice is turned into the tub, tossed with a dressing of rice vinegar, sugar and salt using a wooden paddle (shamoji), then covered with a cloth to cool. Traditional tubs are cypress bound with two copper bands.[1]
The group lists eight sizes from 310 mm inside diameter and 70 mm deep up to 605 mm and 120 mm deep. The catalogue gives a rated capacity for each, from 1.44 to 9.0 litres. They sit with the other Japanese galley utensils, such as sushi boards and bamboo rollers, and are ordered by cooks on ships with Japanese crews or menus.
How to specify it
Give the inside diameter, or the catalogue capacity, sized to the batch of rice the galley makes. Domestic tubs start at about 30 cm, while restaurant tubs run to about 1 m, larger than this group.[1]
Order the paddle and cloth with the first tub if the galley has none. Ask for the wood and the bands to be stated on the quote, so a like-for-like replacement can be checked.[1]
Rules and certificates
WHO Guide to Ship Sanitation, guideline 3.3: equipment and containers that touch food must be easy to clean and disinfect, made of materials with no toxic effect, and kept in good repair. Food-contact surfaces should be free of open seams, cracks or crevices.[2]
A wooden tub whose staves have opened or split no longer meets that, so renew it rather than keep using it. MLC, 2006 Standard A3.2 also requires frequent documented inspections, by or under the master, of the galley and the equipment used to prepare food.[2][3]
