Tableware & Galley Utensils

Tableware and galley utensils is one of the largest sections of the guide, because a galley wears things out: plates, bowls and cups for the mess rooms; cutlery by the dozen; stock pots, frying pans and roasting tins; French, boning and bread knives; strainers, ladles, whisks and mixing bowls; food containers and trays. The chief cook lists what has broken, and the chief steward or master signs the requisition.

Most items are stainless steel or porcelain and are priced per piece, set or dozen. Blade lengths, pot capacities and plate diameters are part of the IMPA description, so quoting the code is usually enough.
